Dining
Recently voted ‘Chef of the Year’ at the 2009 Scottish hotel awards, Jean-Baptiste serves his delicious seasonal food in the former Drawing Room of the Ward family home, now known as the Dining Room. Surrounded by listed historical Arabesques hand painted by the Hyde Brothers in the 1860’s, the grand fireplace, and dramatic views over the grounds and gardens of the Estate, each meal is a celebration sourced mainly from Scotland’s natural larder.

The elegant three AA rosette restaurant entices guests with a choice of a seasonal Table D'Hôte Menu and the daily changing Tasting Menu with its unique vegetarian dish ’Taste of the Kitchen Garden’. For guests, who are into smoked dishes, Jean-Baptiste loves to prepare an unique ‘Cold Smoked Tasting Menu’ produced from Kinnaird’s own smokehouse.
“Using traditional smoking methods we create dishes such as Kinnaird Smoked Potatoes prepared by smoking our own butter. We also smoke our own nuts, cheese and fruit.”
Jean-Baptiste Bady
Complementing the cuisine is an international wine cellar, ranging from classic French châteaux to the finest wines the New World has to offer, overseen by Food & Beverage Manager Max Schaeflein. Max is the mastermind behind Kinnaird’s Gourmet Experiences planned for 2009 to be hosted by renowned wine experts and matched by Head Chef Jean-Baptiste Bady’s creations.
